Sometimes you just don’t know what to make in a hurry on a Saturday evening. Everyone has gone their own way and, many times, it’s a catch-up day. You can heat leftovers or order pizza or some other take-out. But this recipe is so easy, you can whip it up quickly and pair it with a salad or bowl of soup, and tah-dah! Dinner is ready!

POTATO PANCAKES

Servings: 4-6 (depending on size)

INGREDIENTS:

3 Potatoes, grated and squeezed of their water

2 green onions (scallions), sliced

1 small bell pepper (or 1/4 of a large one), diced

1/4 Teaspoon garlic powder

1/4 teaspoon salt

1/8 teaspoon black pepper

1 Tablespoon Parmesan cheese, grated (or your favorite Italian cheese)

butter or oil

DIRECTIONS:

Mix everything in a bowl. Heat a nonstick skillet with butter or oil on high until very hot, and with a flat-wearing tablespoon, take a heaping amount of the mixture and place in the skillet. Flatten with a spatula. Continue till all your potato mixture is finished. You may need to do this in several batches. Lower heat to medium while cooking.

Leave your potato pancakes alone until they release on their own in the pan. If they seem to be sticking, add a little water to the pan. This will release them. Flip and cook the other side till done.
